Chef Sau’s Herb Encrusted Sole Fillet

Here’s the recipe for the dish Chef Sau del Rosario cooked for us in Green Living. It’s healthy, green, and shows of local diversity. It’s also one of the best sellers in Le Bistro Vert.

You’ll need: a sole fillet, lemon butter sauce, a mix of herbs of your choice (like tarragon, parsley oregano), some cashews, and puree of edamame.

First season the fillet, put some extra virgin olive oil. Pan fry the fish over a medium fire for 2-3 minutes until it’s medium cooked.  Put herbs over the fish and put it in an oven for 2-3 mins.  To plate just put some edamame puree & lemon butter sauce on the side and top the fish with the cashews and some fresh oregano.
